Roasted Fingerlings Potatoes & Garlic with Caramelized Onions |

SERVES 4
Ingredients:
1 lb. fingerling potatoes, ideally of similar size
2 Tbsp. olive oil
1 head garlic, cloves separated and peeled
1 sprig each or rosemary, savory and thyme
1 Tbsp. each of chopped rosemary, savory and thyme
1 Tbsp. butter
1 large yellow onion
1 Tbsp. fine Madeira
1 large pinch of salt
1 generous grinding of pepper
In glass baking dish or pan, combine fingerling, 1 Tbsp olive oil, garlic cloves and sprigs of herbs. Bake in a 350-degree oven for 30 minutes or until tender.
While potatoes are roasting, sauté butter, 1 Tbsp. olive oil and chopped herbs. Slice the onion and add to the sauté pan. Cook the onion mixture for 30 minutes or more over moderate heat, stirring every 5 minutes until onions are caramelized. Toward the finish, add Madeira, salt and pepper.
Toss roasted potatoes into the caramelized onions. Adjust seasonings to taste and serve.
