Spring recipes make the most of fresh local goat cheese

Fresh, creamy goat cheese like that produced at Bainbridge Island's Port Madison Farms offers a flavor and texture that are ideal for spring dishes. Simply crumble it over a salad of fresh local greens, or you can try this Dandelion Salad with Lardons and make good use of those always-abundant "weeds." I tried it without the fussy phyllo flowers and it was still great.

While you're pulling those dandelions, keep your gloves on and gather some nettles as well to make these little raviolis stuffed with nettles and goat cheese.
